Cold Brew Cashew Butter Banana Overnight Oats (Whole 30 Approved)
The name is long. I get it. But I also left out cinnamon and collagen from the title so it could be worse. I absolutely love these overnight oats. And I use the word “oats” loosely considering there is no oats in this recipe. It is whole 30 approved and clean as a whistle. However so satisfying and easy to make.
I am all about quick and simple when it comes to breakfast and my mourning routine. This is a recipe that I can make quickly after dinner and throw in the fridge for breakfast or to take for my lunch if I am running behind and didn’t prep. I actually just finished them for my lunch as I type this… so amazing!
These are ideal for breakfast because I split the almond milk that it calls for with cold brew for that extra jolt of energy that I always desperately need. I typically make my own almond milk but any unsweetened vanilla or plain almond milk would do! I also like to add in whatever flavor of collagen that I have on hand into the mix for extra whole body benefits. I love using Vital Proteins unflavored collagen and I enjoy the extra flavor Primal Kitchen coconut vanilla collagen brings to this recipe. If you add collagen just be prepared to do some extra mixing to blend because it will goop up a bit! But oh so worth the extra few seconds.
I make my own cinnamon cashew butter every week which is what I add to this recipe, however, any cashew or nut butter would be amazing! Feel free to add as many bananas as you please. I find that a half of a banana mashed up per jar is plenty!
I bought the jars I am using from target. They are the perfect size for this recipe and are too cute. Can’t beat the price either.
Feel free to top with anything you like! Cacao nibs would be great along with coconut and berries. Go crazy. Enjoy!
I sometimes double the recipe and make 4 jars but have not done more at one time than that. I think 4 days is a safe bet for a fridge life.
Recipe
1/4 cup black chia seeds
1/2 cup unsweetened vanilla almond milk (1 full cup if you do not add cold brew)
1/2 cup cold brew (I love Stok)
1 scoop collagen powder
1 large banana
2 tablespoons nut butter
sprinkle of cinnamon
Directions
Combine chia seeds and liquid along with collagen if desired, into a bowl and whisk for about 30 seconds. Leave it to sit for a few minutes while you mash half a banana into the bottom of each jar and top with a tablespoon of nut butter. Go back to seed mixture and stir for another 30 seconds. Then go do the dishes or check instagram for about 5 minutes. Go back to mixture and briefly stir before pouring equal parts into jars. This should be enough time for the seeds to become a little jelly like. Top with additional mashed banana or other fruit if desired. I just top it with another tablespoon of cinnamon cashew butter and then sprinkle with cinnamon. Pop into fridge over night and enjoy!
